Marcus serves as the President of Escoffier’s Austin campus and brings decades of leadership and operations experience to the role. His passion for food began in East Texas, where he spent his childhood working in his grandparents’ vegetable gardens and joining them at local farmers markets. That early connection to fresh ingredients led him into a variety of restaurant positions before he transitioned into education.
Marcus began his culinary education career in 2001 with Le Cordon Bleu Cooking Schools, where he served as VP of Finance and Operations during the construction and launch of the Austin campus. He later held executive leadership roles including Campus President and Chief Financial Officer for two other proprietary education providers in the Dallas area.
Marcus is a graduate of the University of Texas at Austin, where he earned a bachelor’s degree in accounting. He also serves as a board member for the Texas Restaurant Foundation and High School BBQ, Inc.
